My kids like mashed potatoes. They rarely get homemade mashed potatoes, though. So they have acquired a taste for instant mashed potatoes...just add water! While these instant mashed potatoes offer a fast meal, of course they have all kinds of additives and therefore are not as healthy for you as homemade mashed potatoes without all the additives. Still, with homemade or instant mashed potatoes, you can make them healthier foods for your kids by adding healthy ingredients they cannot detect.

Healthier Mashed Potatoes


Ingredients:

Homemade Mashed Potatoes (or Instant Mashed Potatoes)
1/2 Cup Puréed White Great Northern Beans
1/2 Cup Wheat Germ
1/2 Cup Oats

Directions for Homemade Mashed Potatoes:

Make mashed potatoes as normal. Add puréed great northern beans, wheat germ and oats at start of mashing process while potatoes are still hot. Mash and mix as usual until texture is just the way your family likes their potatoes.

Directions for Instant Mashed Potatoes:

Prepare to make mashed potatoes as directed by packaging. Add puréed great northern beans, wheat germ and oats into water to be heated. Heat water as directed. Complete preparation as directed by packaging.
