Healthier Shepherd's Pie


Ingredients:

Homemade or Instant Mashed Potatoes following Healthier Recipe posted on this site
1 Large Can Vegetable Soup with Beef Stock
1/2 Cup Puréed Carrots
1/2 Cup Puréed Celery
1/2 Cup Green Purée (à la Sneaky Chef books)
1/2 Cup Wheat Germ
1/2 Cup Oats (optional)
1 lb. Lean Ground Beef (the leaner the better)

Directions:

Brown ground beef in 12" skillet. Drain grease from ground beef while hot and rinse with hot water. Put ground beef back into skillet, add vegetable soup, carrots, celery, green purée, and wheat germ, and oats if desired. Simmer for 7-10 minutes. Remove from heat. Serve over warm Healthier Mashed Potatoes.
